Place the bacon, mushrooms and onion in a greased ovenproof dish. Don’t choose a dish that is too large – it should be big enough to hold the fillets, but not so big that the ingredients become a bit lost. Drizzle sparingly with olive oil.

Butter one side of each fillet before placing them, buttered-side up, onto the bacon mixture. Season well with sea salt and black pepper.

Finally, drizzle over the white wine before covering with a double layer of tin foil, held securely.

Place the dish on the rack and cook at HI. for 20 minutes.

Uncover and cook for a further 5 minutes before serving with new potatoes and green seasonal vegetables.
